The book features 500 recipes and each dish is a mouthwatering 500 calories or less. Two-color recipe text complements full-color photography inserts. 500 recipes highlight at least 10 different ethnic cuisines, and dishes range from soups, pizzas, and pastas, to chicken, beef, pork, seafood, side dishes, and desserts. Consider yourself armed for mealtime.





My thoughts...
500 recipes with 5 ingredients or less and 500 calories or less.... where do I sign up?!? You might think "how can you get a delicious meal when it has so few ingredients?" Well let me tell you... out of the recipes that I have made, I LOVED them! I have made the Pepper Jack Chicken w/ Chipotle Potato Chips (357 calories), Seared Steaks w/ Chipotle Butter (373 calories), Balsamic Glazed Burgers w/ Sauteed Onions & Peppers (428 calories) and my personal favorite Red Potato Salad w/Honey-Basil Vinaigrette (237 calories).

Robin Miller has done a fantastic job with this book. Very rarely do I love every recipe that I try from one cookbook. The directions are easy to follow and the ingredients are so simple that they are available at all grocery stores. It is perfect for weeknight meals in that the recipes are all around 30 minutes to an hour to make from start to finish. Honestly, what more would you want in a cookbook?
